Mexican Black Bean and Avocado Salad
(For 2 portions)
- 2 beef tomatoes
- 1 red bell pepper
- 1 red onion
- 2 cloves of garlic
- 1 courgette
- 200g black beans
- 1 avocado
- Fresh coriander
- Preheat the oven to 180°C/ gas mark 4.
- Chop the tomatoes, pepper, onion, garlic, courgette and roast in the oven for 10 minutes.
- Boil the black beans in a pan of salted water for five minutes, then drain.
- Combine the roasted veggies and beans in a bowl, then top off with chopped avocado, coriander, a squeeze of lemon and salt and black pepper to taste.
Zesty Nachos
- 6 portions
- 300g mushrooms
- 165g sweetcor
- 30g spinach
- Fresh garlic
- Paprika, cumin
- Pack of hard taco shells
- 1 lime
- Fresh coriander
- Mini tomatoes
- 1 red onion
- Fry the mushrooms, sweetcorn and spinach in a pan on a medium heat with garlic, some olive oil and the seasoning.
- Heat the shells under the grill for a minute or so until warmed, then transfer the mushroom mix equally into the shells.
- Top with a squeeze of lime, coriander, halved mini tomatoes, sliced red onion and serve with fresh salsa.
