Festive seafood recipe 1 – Firecracker Coconut Prawns
The spicy Sriracha coating and crunchy coconut crumb on these firecracker prawns, makes them ideal for sharing.

Ingredients:
- 500g large cooked and peeled king prawns
- 150ml Sriracha sauce
- 50g plain flour
- 150g unsweetened desiccated coconut
- 75g panko breadcrumbs
- Light mayonnaise and Sriracha for the dip
- Fry-Light oil
Method:
- Set out a plate with the plain flour, a small bowl with the Sriracha and a plate for the coconut.
- Dip each prawn first in the flour, then Sriracha, then coconut.
- Repeat the steps until all the prawns are coated, place them on a non-stick baking sheet.
- Spray each prawn lightly with Fry-Light before placing in a preheated oven at 220°c/200°c fan, for 10-12 minutes, or until the prawns are cooked through.
- To make the dipping sauce, mix mayonnaise and Sriracha according to taste. Serve immediately.
Festive seafood recipe 2 – Asian-style Tartare Bites
These Asian-style tuna tartare bites are a fantastic small dish to serve guests over the winter festivities.

Ingredients:
- 250g sushi-grade tuna
- 2 tbsp very finely grated ginger
- 2 tbsp sesame oil
- 1 tbsp light soy sauce
- 3 spring onions, finely sliced
- 1 tbsp lime juice
- 15-20 rice crackers or other toast-style crackers
- 1 tbsp black and white sesame seeds, to garnish
Method:
- Using a very sharp knife, carefully cut the raw tuna into small cubes.
- Place the tuna into a mixing bowl and add the ginger, sesame oil, soy sauce, and chopped spring onions. Mix well.
- Just before serving, stir in the lime juice. Place a spoonful of the tuna tartare mix on each of the crackers.
- Garnish with a sprinkling of sesame seeds and serve immediately.
Festive seafood recipe 3 – Classic Prawn Cocktail
Is it really Christmas Day without a classic prawn cocktail? We’ve mixed things up by plating our dish, however a wine glass or dessert coupe works just as well.

Ingredients:
- 400g cooked, peeled king prawns
- 2-3 little gem lettuce, shredded
- 6 tbsp light mayonnaise
- 2 tbsp tomato ketchup
- Juice of 1 lemon
- Dash of Worcestershire sauce and/or Tobasco, according to preference
- Ground black pepper
- Smoked paprika and fresh dill, to garnish
Method:
- In a large mixing bowl, mix together the mayonnaise, ketchup, lemon juice, and Worcestershire sauce and Tabasco, if using. Season well with black pepper.
- Add the prawns and stir well to coat thoroughly.
- Arrange the shredded lettuce on the plates and divide the prawn mixture evenly.
- Garnish the prawns with a pinch of smoked paprika and a spring of fresh dill.
